Barely four hours of sleep last night, on account of a glass of bubble tea (yes!).
Neck-deep in boring numbers – stock inventory, sales figures. Excel sheets, formulas… ugh!
So not in the mood to experiment with new recipes nor even to attempt anything special. I decided to just make omelets for dinner. Plain and simple, no toying with presentation. Please don’t look at me that way.
Josh loves eggs –scrambled, poached, sunny-side up, soft-boiled, steamed, etc. So I knew he would gobble it up. Zoë, well, she eats pretty much everything. Because we had some minced meat, I decided to use that as filling, adding garlic and cheese. Easy-peasy.
Served them up. Josh went, “Yum! I love the cheesy part.” Good.
He quickly finished his portion and I asked him if he wanted some more. “I would love to have some more, Mommy!” After he was done, he told me that his tummy was full, but “maybe you could give me another small piece.”
That was music to my ears.
