I call this my lazy rice. Because this is what I make when I’m feeling really lazy. And I am feeling very lazy today. Very. No particular reason. I’m so lazy that I couldn’t even be bothered adjusting the lighting so that the photo would come out better. I couldn’t even be bothered to work on the photo to make it sharper. I couldn’t. be. bothered. Just trust me, though, that this is really yummy.
This recipe is a slight variation from the yellow basmati rice that I made before. The steps are the same, only this time, I used different ingredients.
Lazy Rice
- 2 cups long-grain rice
- 2 cups water
- 1 tbsp ground turmeric
- 1 tsp salt
- 4 tbsp butter
- 1-2 cups frozen peas/carrots/corn
- 1 cup raisins
1) Throw the all the ingredients – EXCEPT the frozen veggies and the raisins --into rice cooker. Cook.
2) When rice is cooked, add in 1-2 cups of the frozen veggies and the raisins and gently stir in.
3) Cover rice cooker again and keep warm for another 8-10 minutes. OR if you feel that the rice is still a bit too ‘wet,’ put it on the cook cycle one more time.

Postscript: I like it better with basmati rice, but I love the frozen veggies and the raisins. I actually added the raisins because the kids love raisins. Me, I take out the raisins from raisin bread, BUT I love the raisins in this rice.

Oooh...yummy! I've made something similar, with chicken base and frozen veg, but I always add the veg at the beginning, and they turn out like mush. LOL I'll try adding them at the end next time! haha! I think this will be our dinner tonight...I can't be bothered to plan anything. ;-)

Thank you for posting a picture. It really looks delicious and healthy too. I never would've thought adding raisins but I bet that that really makes it taste even better.
We all have them lazy days but that rice sure looks YUMMY!! :o)
